2.5 kg of slow-cooked Iberian pork with rice and a sauce of Chardonnay, cream, blue cheese, sweet peppers, and bacon. Luckily, it was worth the more than 2 hours I spent in the kitchen making it, even though I didn’t have time to properly brine the meat.
