Instructions
- Pre-heat your oven to 180°C.
- Cut the dark chocolate into pieces and put it in a bowl with the butter. Microwave for 2 minutes (till molten) and leave to cool to room temperature.
- Whisk together the eggs and sugar till they are thick like a milk shake, pale and twice the original size (3-8 minutes).
- Add in the molten chocolate/butter mix and gently fold it in. Don't be in a hurry so you don't let out all the air you just got into it.
- Put the cocoa and flour in a sieve held over a bowl so they mix and you get rid of lumps.
- Fold the cocoa/flour mix into the egg/sugar/chocolate/butter goo.
- Chop the white and milk chocolate into pieces, and fold them into what shall now be referred to as the dough.
- Put the dough into a tin and the tin then into the oven. Leave for approximately 25 minutes. If it wobbles in the middle when gently shaken it is not yet done.
- Leave to cool in the tin and cut into little pieces of chocolate heaven. They keep in the fridge in an airtight container for a couple weeks and a month in the freezer.
Recipe Notes
Goes well with a scoop of vanilla ice cream, a sprinkle of cocoa and chocolate sauce on top.
Replace the butter with cooked beets to cut off 25% of the calories (add to the egg/sugar mix before the molten chocolate).
