I just learned these guys are called Jerusalem artichokes; they are apparently super modern right now and are also nicknamed fartichokes. That last part makes me very happy.
I just bought them because they have a funny name in Dutch (aardperen, dirt/ground pears; potatoes are aardappelen, dirt/ground apples, like in French) and totally look like chicken wings wrapped in bacon. Tasty though.
